Although it has only been a few weeks since moving to Guam, I've had the opportunity to experience a glimpse into the culture. While I still have so much to learn, it is no secret that food plays a huge roll. From short ribs to fried Lumia; where there's fun, there's food.

With many different cultures inhabiting Guam, it is considered the melting pot of cuisine. On island, you can find Korean, Filipino, and Japanese dishes which brings me to this Filipino-inspired dessert, Mixed Fruit Spring Rolls. The true Filipino snack, also known as Banana Lumpia (Turon), consists of banana and jackfruit; wrapped in lumpia paper, and lightly fried to perfection.

While lumpia is no stranger to Guam, I've taken the popular snack and transformed it into a mouth-watering dessert. In addition to banana and jackfruit, I've added slices of fresh sweet mangoes. I wanted to incorporate Guam's favorite fruit, which conveniently happens to be in season.

In the past, I've heard that lumpia is pretty hard to master, but these rolls are anything but difficult! In fact, my eight year old helped me roll most of them. If that isn't impressive, then I don't know what is. First, you want to start by peeling apart your lumpia wrappers. Once that is complete, slice all of your fruit lengthwise. I purchased the jackfruit frozen, so it was already sliced, but I found it helpful to cut the banana in half first, then slice each half into quarters.

In a shallow bowl, pour your brown sugar and set aside. Take the banana pieces and roll in the brown sugar until well coated. Now make your egg wash and set aside. Place at the bottom of the wrapper. Now add the two pieces of jackfruit and one slice of mango. Fold the bottom of the wrapper over the fruit, roll once, then tuck in both sides. Continue to roll and seal the envelope with a small amount of your egg wash. Then take an additional wrapper and roll it one more time.

Rolling the lumpia twice provides it with a harder exterior so the liquids do not saturate the wrapper. Set on a baking sheet and spray both sides generously with coconut oil. Bake for approximately 10 minutes then flip, spraying one more time, bake an additional 10 minutes until golden brown.

Ingredients

  • 1 package Lumpia wrappers (about 30 sheets)
  • 2 ripe bananas
  • 2 ripe mangoes
  • 1 package frozen jackfruit (or jarred)
  • 1/3 cup brown sugar
  • 1 egg for egg wash
  • coconut spray
  • Instructions

  • Preheat the oven to 350ºF.
  • Start by gently peeling apart the lumpia wrappers.
  • Cut both bananas in half, then slice each half into quarters length wise. Continue to slice the mango and jackfruit into strips as well. You should have 16 slices of each fruit.
  • Pour the brown sugar in a shallow bowl, set aside.
  • Take the lumpia wrapper and lay on a flat surface so it looks like a diamond.
  • Take a piece of banana and coat with the brown sugar. Place the banana towards the bottom of the wrapper and add a slice of jackfruit and mango.
  • Fold the bottom of the wrapper over the fruit and roll once. Tuck in each side so it resembles an envelope. Continue to roll and seal your envelope with the egg wash.
  • Take one more lumpia wrapper, and wrap your Spring Roll one more time. Having 2 layers of lumpia paper will provide an extra crunchy crust.
  • Generously spray both sides with coconut oil and place on a baking sheet. Bake for 10 minutes, flip and spray again. Bake for an additional 10 minutes, until golden brown.
